I'm 150% sure the first ship in the clip was in the Netherlands (hearing 'huppakee'..a bit like there she goes, and the road looked familiar).
I've seen many of these ship slides when I was a kid, we made sunday trips of it and so did/do a lot of people. There's a shipyard about 15 minutes away.

very cool stuff, but isnt there some safer way to do it? Like keep them in a dry dock and just flood it at the end? These ships seem like they are about to flip over... :) Or at least, couldnt this do some damage?

I think it's thought-through. Having a dry-dock costs a lot of money and space.
The only possible damage is to persons who stand on the road in the way of the first wave haha. The water's deep enough so it won't hit the bottom, at full sea the ships got to withstand a bit of punishment too.
